Traditional Flat Cabbage Growing and Processing in Hajdúhadház
The cabbage grown by the people of Hajdúhadház (Eastern Hungary) is characterised by a flat shape, and thin leaves and a fine structure. The cabbage – a base of various traditional cabbage dishes and the sour cabbage produced through a traditional procedure – is grown for sale at markets in the region and for local consumption.
The cabbage – “sweet” or sour – serves as a base of various dishes, most renowned of which is the traditional stuffed cabbage. It has been a source of living or an additional income for Hajdúhadház citizens for years. Members of the cabbage-growing community enjoy a professional and friendly relationship with other members of the trade, whether local or in neighbouring settlements, as well as with hobby gardeners. Meetings, conferences and other events organised together are a place for an exchange of experiences.
